EASY LENTILS WITH CORNBREAD.
This little, easy recipe for lentil stew is the SOOOO GOOD! I have made this a few times and I can tell you, it is EASY & DELICIOUS! Here is the recipe: ENJOY!
1/4 Cup Olive Oil 1 Can Stewed Tomatoes
1/2 Red Onion, small chop 1Cup Lentils
1-2 Carrots, Sliced Thin 3 Cups Water
2 Cloves Garlic, Minced Season Salt, Pepper, Parsley & Smoked Paprika to taste.
(May make it spicy with the addition of chilis, etc. but, I found that the paprika is enough)
In the Olive Oil, sauté the Onion, Carrots, & Garlic till tender, stirring occasionally, about 5 minutes.
Add the Tomatoes & cook 1-2 minutes.
Add Lentils, Water & Seasonings bring to a boil & reduce to a simmer.
Cover & cook till Lentils are cooked through, but still have some bite, about 12-15 minutes.
Serve with Cornbread… and, a little jam on the side, maybe…? ENJOY a quick & easy dinner! YUMMY! & HEALTHY TOO…
